LEMON ICE
BOX PIE
Crust: 1-1/2 Nabisco Graham Cracker Crumbs 1/2 cup
sugar
113 cup
melted butter
Put crumbs
on wax paper after mixing with sugar.
Fold mix in
melted butter with fork until all is moist.
Mold into
9’pie pan & cook 7 mins at 400 degrees.
Filling: 2 cans Eagle brand condensed milk-sweeten 4
egg yolks
1/2 cup
lemon juice
Put
condensed milk in large mixing bowl
Stir in
lemon juice slowly until mixed
Separate
yolks & whites. Add yolks to
condensed
milk & stir well.
Put mixture
into cooked crust
Meringue
4 Tbsp
sugar
I tsp
vanilla
Beat egg
whites in cold mixing bowl at high speed of mixer when frosty, slowly add sugar
when peaked, add vanilla.
Place over
pie and cook until browned at 425 degrees.
When cool,
refrigerate
