Vidalia Onion Pie
3 large Vidalia onions, peeled and thinly sliced, (3 cups)
3 tbls butter or margarine
1 - 9 inch pie shell
1/3 cup milk, divided
1 cup cottage cheese
1 cup dairy sour cream
1 tsp salt
1/8 tsp seasoned pepper
2 eggs, beaten
1 tbl flour
1/3 cup grated cheddar cheese
cooked bacon or ham (optional)
Simmer onions until soft in hot butter or margarine. Turn into baked pie shell.
Combine cottage cheese, sour cream, salt, pepper and eggs. mix well. Blend
milk with flour, stir into sour cream mixture. Mix well; pour over onions
in pie shell. Sprinkle with grated cheese. Bake at 325 degrees for 30 to 35
minutes. Pie should be firm in center. If desired, garnish with crisp bacon
strips or slivers of cooked ham. Serves 8.
This is so delicious. It is very healthy. It would be good served with a tossed
salad or a mixed fresh fruit salad.
Vidalia Onion and Zucchini Bake
Microwave dish
1/4 cup butter
3 large thinly sliced Vidalia onions
2 medium thinly sliced zucchini
2 eggs
1/4 cup milk
1 tsp salt
1/2 tsp dry mustard
dash pepper
1 cup grated Swiss cheese, divided
Place butter in flat 1 1/2 quart microwave-proof dish. Cook on high until
melted. stir in onion, and zucchini, and cover with waxed paper. Microwave
on high for 6-7 minutes. Stir together eggs, milk, salt, dry mustard, pepper
and half the cheese.
Pour mixture over vegetables. Sprinkle with remaining cheese. Cover with paper
towel. Microwave on medium for 8-10 minutes or until firm. 6 servings
(Or sauté the onions and zucchini and bake in 375 degree oven for about
20 minutes.)
