Lemon Chess Pie

 

Yields one 9-inch pie

 

1 1/2 cup sugar

2 tsp fresh lemon juice

1 stick unsalted butter, softened 

1 tsp vanilla

4 eggs, beaten

 

Preheat oven to 325 degrees.

Cream sugar and butter together. 

Add eggs and blend well. 

Add other ingredients. 

Pour into 9-inch unbaked pie shell.

Bake 40-50 minutes, until set. 

 

Variation 1:  Add 3 1/2 ounces flaked coconut. 

 

Variation 2:  Substitute 1 1/2 tsp vinegar for lemon juice.
