Mac’s Mac and Cheese

 

Makes 10 servings

Prep time 15 minutes

Cooking time 40 minutes

 

            1          1 lb. Box large elbow macaroni
            1          1-lb block New York extra sharp cheddar cheese
            1          8 oz package cream cheese
            2          heaping Tablespoons butter
            2          beaten large eggs
            1/4        cup milk or half and-half             

Salt and Pepper to taste

1/4 to 1/2 cup seasoned bread crumbs

 

Preheat oven to 350 degrees. In a large pot of boiling water, cook macaroni according to Package directions and drain. Cut cheddar and cream cheese into cubes. To macaroni, Add butter, cheeses, eggs, milk, salt and pepper. Mix well. Pour into greased 9 by 13 inch pan. Top with seasoned bread crumbs. Bake 30 minutes.

 

 

 

 

 

“No Bake” Macaroni

 

Makes 4 servings

Prep time 15 minutes

Cooking time 10—15 minutes

 

 

            2          Tablespoons margarine
            ¼         cup all-purpose flour
            1          teaspoon salt
            ¼         teaspoon black pepper
            2 1/2     cups milk
            2          cups cubed Velveeta cheese
            8          ounces cooked and drained elbow macaroni

 

In a medium-size saucepan, melt margarine on low heat. When melted, add flour, salt and pepper. Stir to blend well; add milk slowly and cook until thickened. Add cubed cheese and blend to melt. Add cooked and drained elbow macaroni. Serve.
