Hawaiian Cake
2 cups all-purpose flour
2 cups sugar
2 teaspoons baking soda
3 eggs, beaten
Large can of crushed pineapple w/juice
1 cup chopped pecans
Mix all ingredients together; you may add coconuts, dates, etc., if you like.
Pour into 9 X 13 pan sprayed with Pam or buttered.
Bake at 350º for 35 to 40 minutes, until inserted toothpick comes out clean.
After the cake has cooled frost with icing.
Icing
2 to 2 ½ cups powdered sugar
1 stick softened butter
8 oz. softened cream cheese
Mix butter and cream cheese together until smooth. Add sugar until well blended.
You may also add nuts if you like.
This cake seems to get better the next day, so make it a day ahead.
