Garlic Lover’s Hummus

 

1 15 oz. can chickpeas, save the liquid

4 large garlic cloves

¼ cup lemon juice plus another tablespoon or two

2 tablespoons olive oil

3 tablespoons tahini

¼ cup plus 1 tablespoon low fat plain yogurt

½ teaspoon ground cumin

1 teaspoon sea salt

 

Turn on food processor and drop in garlic cloves

When finely chopped, turn machine off and add chickpeas

Process for about ½ minute until chopped and mealy

Add lemon juice, oil, tahini, half the yogurt, cumin and salt with machine on

Process until smooth and thin as desired with the remaining yogurt or liquid from chickpeas

Hummus should be smooth but not runny

Taste and add more sea salt if needed

 

Place in a shallow bowl and sprinkle on a little chopped fresh parsley and a little olive oil
